- Saucepan large enough to hold pears upright.
- Peeler

Ingredients for Poached Pears
- 4 Small ripe, firm pears with stems
- 2 tbsp Lemon juice
- 400 grams Caster sugar
- 6 Slices of lemon
- 6 cups Water
Ingredients for Raspberry Sauce
- 340 grams Frozen raspberries
- 100 grams Caster sugar
Instructions
Instruction to Make Poached Pears
- Half-fill a large bowl with cold water. Stir in lemon juice.
- Cut the end of the pears so they stand nice then peel the pears, leaving stems on. Add to bowl to stop them from going brown.
- Bring 6 cups water, the sugar and lemon slices to boil in a pot. Add pears, reduce heat, cover and simmer 20 to 25 minutes until tender when pierced at the bottom.
- Let cool in the pot (discard lemon) until cold.
Instructions to Make Sauce
- To Make Raspberry Sauce: Stir berries through a strainer to make a seedless purée. Stir in sugar.
- To serve: place on a plate and spoon Raspberry Sauce on one side of each.
