Strawberry Sugar Puffs

Equipment

  • 1 Rolling Pin
  • 2 Baking Trays
  • 1 Baking Paper
  • 1 Knife
  • 1 Sieve
  • 1 Fork
  • 1 Whisk
  • 1 Wire Cooling Rack

Ingredients

  • 2 Sheets of Puff Pastry (640grams)
  • 14 Large Fresh Strawberries
  • 330 grams Soft Cheese Spread
  • 90 grams Icing Sugar (plus a little extra for sprinkling to serve)
  • 2 tbsp Milk
  • 1 tsp Vanilla Extract

Instructions

  • Preheat the oven to 220℃ / 200℃ for fan assisted / Gas Mark 7
  • Roll the puff pastry onto the baking tray and using the knife divide the sheet into 6 pieces. Then within each rectangle lights score a smaller rectangle leaving roughly an inch all the way around the edge.
  • Repeat this on the other puff pastry sheet.
  • Fork the inside rectangle to prevent it from puffing up as much.
  • Pop the two puff pastry sheets into the oven and bake them for between 10 to 15 minutes, until they are puffed up.
  • When cooked, placed the puff pastry rectangles onto a wire cooling rack to cool down, before adding any toppings.
  • To make the sweet filling, you need to whisk the soft cheese spread, with icing sugar, vanilla extract and milk in a bowl, until its all mixed.
  • Once the puff pastries are cooled down enough you can spoon on the sweet filling.
  • Then cut the green tops of the large strawberries and place two on top of the sweet filling. If you would rather you could slice strawberries and lay them flat,

  • Finish with sprinkling using the sieve some icing sugar over the top all all the strawberry filled puff pastries.

Tips for This Recipe

When you're scoring the inner rectangle into the puff pastry, make sure you don't cut too deep and cut through to the bottom.
