Ingredients for Cake

  • 310 grams Plain Flour
  • 270 grams Caster Sugar
  • 220 grams Unsalted Butter
  • 320 ml Buttermilk
  • 3 tsp Baking Powder
  • 6 Large Eggs
  • 2 tsp Vanilla Extract

Ingredients for Frosting

  • 110 grams Unsalted Butter
  • 5 Strawberries for puree
  • 2 tsp Lemon Juice
  • 380 grams Icing Sugar
  • ½ tsp Vanilla Extract
  • Handful of Blueberries for toppings
  • Handful of Strawberries for toppings

Instructions

instruction to Make the Cake

  • Pre heat the oven to 180 ℃ / 160 ℃ fan assisted / Gas Mark 4
  • Lightly grease the cake tins with some of the butter
  • To make the sponge first, mix together in a mixing bowl the plain flour and baking powder.
  • Then cream the unsalted butter, vanilla extract and caster sugar, by whisking them in a bowl until they are a lighter coloured and fluffy.
  • Next add one egg at a time, whisking them completely in between.
  • Then add the pre-mixed plain flour and baking powder mixture plus the buttermilk into the mixing bowl. Whisk well until everything is combined.
  • Divide the cake batter evenly into the two cake tins.
  • Bake for around 30 minutes or until a skewer comes our of the cake clean.
  • Once cooked, place the sponges onto a wire rack to completely cool.

Instruction to Make the Frosting and Decorate

  • When the cake has cooled, you can start to make the frosting. First, place the 5 large strawberries and lemon juice into a blender to create the puree.
  • Then add the puree into a mixing bowl with the unsalted butter and Icing sugar and whisk to a consistency you wish to be able to spread onto the cake, if it needs to be thicker add a drop more icing sugar.
  • Using an icing spatula spread the frosting onto the top of one of the sponges, and then place the other sponge on top.
  • Continue to place the frosting onto the top of the second sponge and all around the sides of both sponges.
  • To finish decorate the top with strawberries and blueberries.
