  • 1 Mixing Bowl
  • 1 Whisk
  • 1 Baking Tray
  • Baking Paper
  • 1 Rolling Pin
  • 1 Cookie Cutter and small heart cutter
  • 1 Wire Cooling Rack
  • 1 Saucepan
  • 1 Glass bowl to fit onto the saucepan

Ingredients

Ingredients for the Lemon Butter Biscuits  

  • 200 grams Plain Flour
  • 100 grams Caster Sugar
  • 130 grams Unsalted Butter
  • 3 Zest of Lemons
  • Pinch of salt
  • 1 Large Egg

Ingredients for the Lemon Curd

  • 6 tbsp Fresh Lemon Juice
  • 1 tbsp Finely Grated Lemon Zest
  • ½ Cup Caster Sugar
  • 6 Large Egg Yolks
  • 4 tbsp Unsalted Butter

Instructions

  • Preheat oven to 180°C
  • Line a baking tray with baking paper.
  • To Make the Lemon Biscuits, place the sugar, butter, lemon zest and salt into a large mixing bowl and cream together with a whisk until light and fluffy.
  • Beat the egg in a mug with fork, then add this to the other mixture and whisk well.
  • Add flour and whisk until a stiff dough.
  • Place the dough into the fridge for 1 - 2 hours to firm up before rolling out
  • Place the dough on a clean surface and roll. Using a cookie cutter cut out biscuits and cut out the heart shape inside of them.
  • Bake for 10mins until lightly golden. Place on a wire rack to cool.
  • Next, make the lemon curd, combine all the ingredients in a double boiler (or in a glass bowl over a pot of simmering water). Heat while whisking constantly until the mixture thickens and reaches 160 degrees or coats the back of a spoon.
  • Then put it in the freezer until ready to use.
  • Once the biscuits are cool enough, build the biscuit, by spreading some of the lemon curd on the biscuit base, and lay a biscuit on top that you has a heart shape cut out of it.
